Things for Easter

I get excited about Easter.
Easter is like Christmas, but without all the expectation.
It is absolutely my favourite time of year for plants and flowers, and it’s a wonderful opportunity to be totally extra with your table decorations, both inside and out.
It’s not happening for another month, but if you, like me, are already thinking about Easter Sunday with family and friends, (in the garden perhaps?) I’ve updated my shop with lots of gorgeous things for your garden and your Easter table - here’s a taster, and there’s a button below.









And Cake…. I like making this one, which requires no cooking and is a cheesecake really, rather than a cake, but that’s the point, because it doubles as a pudding (who needs cake for tea when you have chocolate eggs?)
You need to get those delicious little pastel coloured speckled cadbury mini eggs for this, and a 7” cake tin, lined at the bottom with parchment.
Here’s the recipe:
280g digestive biscuits
140g butter
8 little bags of mini eggs
600ml double cream
140g icing sugar
2 large tubs philadelphia cream cheese
juice of half a lemon
Crush biscuits with melted butter and press into tin and chop most of the mini eggs in half
Whip cream to soft peaks, fold in cream cheese, chopped mini eggs, icing sugar and lemon juice
Smooth mixture on top of biscuit base and refrigerate overnight.
Add a blob of whipped cream and a pile of mini eggs to the top before you serve it.
Of course there are far chicer versions of this pudding that you can make by ditching the mini eggs and using ginger nuts instead of digestives. Then just pile on the most beauteous summer fruits you can find. Stupendous, indulgent, celebratory.

I went to see Arcadia at the Old Vic the weekend and I want to write about it but I need some time to process it…next time.

Thank you Laetitia, I have been trying to find (a version of) that cheesecake forever!
And that little stool! I immediately fell down a rabbit hole there.
It’s my favourite time of the year too. We have two weeks holiday from teaching at Easter and it is the best holiday-even better than the summer one I think (it’s quality not quantity!) x
