I hope you have had the Christmas you wished for, or at least one approximating it.
We have had the joy not only of Christmas with beloved family, but also a boxing day proposal for my beautiful niece …HURRAH FOR LOVE!!!
I am sharing the recipe here today for my Aunt Olivia’s Galletas de Queso (which I very much hope I have translated correctly). This is a tapas that she always served to guests, (and is still served in her home even though she is gone) along with bite-sized squares of tortilla de patata, and slices of jamon. I am currently about 86percent Galletas de Queso. I do not know where she got the recipe but it is just genius. These things are utterly delicious, melt-in-the-mouth bites of joy. You could use any sort of hard cheese I think, although I might instinctively move towards sharper, chalkier cheeses, with a certain crunch.

Olivia’s Galletas de Queso
1 Cup butter
2 cups plain flour, sifted
1/2 tsp salt
2 Cups strong manchego cheese, grated
1/4 tsp cayenne pepper
2 cups Rice Krispies
Method:
Mix the butter and cheese with your hands.
Add the flour, salt and cayenne pepper and incorporate with your hands.
Very gently mix in the Rice Krispies.
Form into little bites, placing them onto a baking tray about 5cm apart. Lightly depress the top of each bite with the back of a fork.
Bake at 180 for about 15 minutes.

My very dear (and departed😔) aunt made these every Christmas too. She was not Spanish in the least, and where the recipe came from I have no idea, but they are delicious!
